Happy Monday Everyone!
I hope your weekend was as productive as ours was. We started/completed a lot of projects around the house this weekend that I am really proud of. We set up the Christmas tree, decorated it, decorating the mantle, and gave the kids’ room a little makeover! I know you want to see pictures, and I desperately want to share them, but the camera is still out of commission. Who knew light meters were so darn expensive to replace? $500? YIKES! Boo Ritz Camera, I think we’ll just buy a new one.
So rather than showing you all the awesome projects that I can’t prove we did, I’m sharing a recipe!
Now, this recipe is one even our kids love. It’s not only super yummy, it’s super easy too! However, I did hesitate posting this one because it’s not one of the most aesthetically pleasing dishes. Chicken legs? I didn’t buy them for years because I just didn’t like the way they looked. But these are delicious and are super family friendly too!
(This is not my picture, as our camera still does not work. Image found here.)
What you need:
- 6 chicken legs (more or less as needed)
- 3 tablespoons crushed garlic
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon red pepper flakes
- 1/2 cup chicken broth
- 3 tablespoons oil
What to do:
Mix spices together in med bowl.
Pour oil into separate med bowl.
Dip chicken legs in oil, then dip and roll in spice mixture.
Place chicken legs in crock pot. Pour chicken broth and garlic over ingredients in crock pot.
Cook on low for 8 hours.
Optional: Place chicken legs on an oiled cookie sheet and rotate under broiler for 5 minutes. This helps to crisp the skin a little before serving.
I serve this with roasted potatoes cut into wedges and mixed veggies on the side. There is hardly any effort involved in this dish and it tastes amazing!
The slow cooker has to be the best thing ever invented for families, so please feel free to share your favorite recipe with us! We are always down for trying news things.
